Shuffling the deck, dealing the cards, counting the chips and reading the board are all skills that dealers need to master in order to be proficient at this profession. Shuffling the deck with out reveling the cards until needed is just one of the skills dealers learn. Face down and fanned together so that only the dealer can see the value of each card takes a little practice but can easily be learned.
Dealing the cards with out flipping one is also an easy task to master. Speed is required so that as many hands can be dealt as possible.
Counting the chips in order to make each pot accurate can become difficult with multiple side pots and unequal bets. Main pot goes to all players with equal stake in it plus the blinds and anties. Side pots contain additional wagers above the mainpot.
Once the cards are dealt and all bets are in, the cards are reveled the dealer determines the winner by anaylesing the board in conjuntion with each players hold cards. Sometimes the players will see the best hand before the dealer. This is ok because the cards read as they are.

Dealing a home game is nothing like dealing on a professional level. Why do I say that? When dealing poker at a your home, all the players are friends or friends of friends so noone cares if you screw up. If you turn the wrong card over at your home game you just move past it and everyone jokes about it. If you do that on a professional level, then there are rules to go by to correct the problem and even then the person accross the table glares at you like you just stole the pot from them.
